The country inn is run by the younger generation who carry it forward. Believable. Tunon is one of those restaurants that passes down through the generations without aging. This venue is set in the shadow of the castle, with its great hall that lends itself well to ceremonies and is a true sentinel of tradition. Today, the daughters of the patron Giovanni, Camilla and Maria Teresa, carry on that tradition by not abandoning mythical dishes like the ‘pen’, a kind of breaded gnocchi which boasts the Municipal designation of origin. But let's go in order. Starting with Russian salad, peppers in ‘bagna caoda’, raw meat and vitello tonnata (starters € 15). Followed by pasta, all freshly made: agnolotti with stew sauce (excellent), gnocchi in nettles of Castelmagno, Tagliatelle with porcini mushrooms and chickpea soup, pasta and beans (top € 10). The main course (€ 15) is traditionally Piedmontese: beef braised in aged Barbera, oven baked veal shank, pork fillet with honey grappa, kid in herbs and wild boar in salami (bred by owners), without forgetting their specialty of boiled meats with sauces and the cougnà (of their own production, according to a family recipe). Finishing with the bonet and hot zabaione with hazelnut cake (€ 4). Tasting menu at 33 euros but, given the richness and the abundance of the dishes, getting to the end will be a real challenge.
